This is one of the classic salad potatoes of French cuisine. The tubers are pretty, yellow, smooth, waxy and slightly curved. They can be eaten hot or cold, with or without skin. Flavour is very good and improves with storage and is enhanced when cooked with leeks ! -oddly for a salad it makes the best possible leek and potato soup. “Belles” are often sold as first earlies – they are not.
