This is one of the classic salad potatoes of French cuisine. The tubers are pretty, yellow, smooth, waxy and slightly curved. They can be eaten hot or cold, with or without skin. Flavour improves with storage and is enhanced when cooked with leeks ! “Belles” are often sold as first earlies – they are not. Premature tubers can be relatively bland.
