This is the Scottish russet sport of James Clark’s English variety, Maincrop (or Langworthy). It was found by Mr Brown of Arbroath in the early years of the 20th century and is still very highly regarded in Scotland and Ireland. It is dry, floury and very tasty, particularly if stored until after New Year. It can be extraordinarily dry when grown in the sunnier south.
