This is the Scottish russet sport of James Clark’s English variety, Maincrop (or Langworthy). It was found by Mr Brown of Arbroath and is still very highly regarded in Scotland. It is dry, floury and very tasty, particularly if stored until after New Year. It can be extraordinarily dry when grown in the sunnier south. The very best samples are found north of Aberdeen.
