A century ago, Suttons had four Fir Apples – large white, small white,red and pink, origin unstated. The pink has survived, kept going for decades by British enthusiasts determined to enjoy this delicious salad. At one time it was very rare but there is now plenty of certified seed. The tubers are very knobbly, impossible to peel and should be cooked whole in their skins. They hold together well and are delightful hot or cold. They fry surprisingly well and decadence is making chips from individual tubers!
